Broccoli Salad Recipe

In hosting our first BBQ in years I was struggling with what to make for side dishes.  We had the traditional hot dogs and hamburgers and chips and dips but I wanted some healthier side options.  I thought back to BBQ’s that my parents used to host when I was growing up and I recalled broccoli salad being a staple.  I knew it would be the perfect side dish BUT I also knew I needed to make it healthier as my mom’s wasn’t exactly a healthy version.

I decided to swap out full mayonnaise with light and used splenda instead of sugar.  Also, instead of slaving over the stove cooking bacon I used the ready to serve Real Bacon Bits from the salad aisle.

The salad was a big hit, my brother-in-law who is a big steak and potatoes kind of guy kept saying how much he liked it and was shocked that I made it with splenda!

I don’t have an exact recipe as I was going off of memory so you can play with the measurements to get the exact sweetness/flavor you are looking for.

BROCCOLI SALAD 

Salad ingredients

  • Two bags (about six cups) of pre-cut broccoli (found near the bagged salads in your produce section)
  • One large red onion diced
  • Two 3oz bags of Real Bacon Bits from the salad dressing aisle
  • 1/2 cup raisins

Dressing ingredients

  • One cup light mayonnaise
  • 1/2 cup Splenda brown sugar (more or less depending on how sweet you want it)
  • 2 TBSP white vinegar

Directions

Mix all salad ingredients in a large bowl.  About 2-4 hours before whip dressing together and mix into salad ingredients.  The earlier you mix the dressing in the softer the broccoli will get.

Anyway, if you make this I hope you enjoy!  We are planning a BBQ for the 4th and this along with the Strawberry Lemon Bars will be added to the menu!
